Selection of the grapes in the vineyard, de-stalking and pressing and short cold maceration.
Soft pressing of the macerated grapes with a pneumatic press. The first pressing undergoes temperature-controlled fermentation at about 18°C in stainless steel tanks and matures partly in French oak barriques used for the 2nd time. It spends 8-10 months here in contact with yeasts that undergo regular batonage to maintain them in suspension.
Natural stabilisation, blending following organoleptic control of the most suitable barriques with the rest of the wine which has matured in concrete tanks and pre-bottling filtration.
At least 8 months’ bottle ageing.
