San Donato’s Recipes Advent Calendar: Pork Sausages flambè with Vin Santo
Fire it up!
This is genuinely one of the most appreciated dishes in San Donato, where savoury and sweet meet in a deliciously juicy dish.
It is also one of those spectacular recipes that are worth the open kitchen show in the middle of a fancy restaurant and yet they are so easy to make you might not believe. All you need is good sausages and our Vin Santo.
Maximum effect and minimum effort!
INGREDIENTS
- 4 sausages
- Bay leaves q.b.
- Extra virgin olive oil q.b.
- 1 cup Vinsanto
On a very hot pan drizzle a generous amount of olive oil and add your bay leaves.
First add your sausages whole and roast them on very high heat until they brown.
Cut the sausages in half and proceed to cook them further, till they creat a crust.
Once you have the crust add the vin santo – make sure you’re not skimping!- and then light it on fire! Keep on cooking until the flame is gone and until the sauce thickens.
Now serve your sausages very hot with a potato pure or cannellini beans with extra virgin olive oil.
