We lay the grapes on apposite boxed where they ?dry?. They ?appassire? for around three months and around Christmas time we choose and and press the best grapes. We put the ?mosto? that we get from the grapes in 100 lt rovere wood cartels where we keep it for five years. During this period the wine ferments and almost all of the sugars are transformed into alcohol. The cartels are then emptied and filled again and the wine is bottled.
