San Donato’s Recipes Advent Calendar: Pork Fillet with Chianti sauce
We all know that wine is made to be drunk, and yet at San Donato we love to cook with it; we believe it adds to our recipes that certain pizzazz that makes them especially tasty. This is why most of our Advent Calendar recipes have wine in it, which makes them all extra allure!
This is one of those dishes that are perfect for the cold winter evenings, best to be enjoyed with friends sitting by the fire while sipping a glass of Chianti Colli Senesi, preferably of course the Riserva Fede.
INGREDIENTS
- Extra Virgin Olive oil q.b.
- Soffritto
- Half a onion
- 1 Carrot
- 1 Celery stick
- Pork Fillet
- Herbs q.b.
- Sage
- Bay leaves
- Rosemary
- 1 Clove of Garlic
- 1 Cup of wine – preferably Riserva Fede
Slice your fillet in disks as tall as your fingers
Add to a hot pan olive oil, garlic, the herbs and your soffritto and sautè. Add your fillet disk and roast them on high heath and both sides.
Deglaze the meat adding a cup of wine -if you have a glass near you take a sip, makes the whole process more enjoyable – on medium heat and finish cooking. Salt and pepper the meat and reduce the sauce.
Little tip: we usually suggest a red but a full body white wine like Riserva Benedetta also works wonders.
